When I go to my local grocery store for produce, I pick produce that is in season & of course things my family likes. I like changing up salads with all types of dressings & veggies. This salad comes from my love of the Olive Garden salad. I researched the Creamy Italian Dressing to make it my own & then I took the base of the Olive Garden salad & made it my own style. I just took this salad over to friend’s birthday & people loved it because it was healthy & FRESH. I start with picking a dressing, then I decide on lettuce & veggies, & then I move on to cheese & nuts as “garnishes”. I am starting a whole series this spring of sharing my family’s salads & dressings. We have salad almost every night & even my littles will eat some because they like the homemade dressing & the cheese. They may only pick out the cheese & suck the dressing off the lettuce some nights, but at least they know salad is part of our dinner!!! Try this simple salad with a simple dressing because it is unbelievable how easy it is to prepare!
- 1 cup Creamy Italian Dressing
- 2 cups Spinach
- ½ head Romaine, diced
- 2 Radishes, sliced
- ½ cup Cherry tomatoes
- ½ Cucumber, diced
- ¼ cup parmesan cheese
- ¼ cup Black olives, sliced
- ¼ cup Banana Peppers, drained
- Mix lettuce together. Add all other ingredients on top of lettuce. Add a pinch of salt & a pinch of pepper, if desired for extra flavor. Toss dressing to coat or serve dressing on the side.
